Marry Me Prawn & Chorizo Pasta

Ingredients (serves 2–3):

200g prawns, peeled & deveined

1 tsp paprika

1 tsp lemon & herb seasoning

1/2 tsp herb lemon salt (or to taste)

1 tbsp olive oil (plus more if needed)

100g Spanish chorizo, diced

2–3 garlic cloves, minced

1/4 small onion, finely diced

1 tbsp sun-dried tomatoes in olive oil, chopped

1 tbsp tomato paste

1/2 tsp chili flakes (optional)

150ml thickened cream

200g linguine or spaghetti

1/4 cup reserved pasta water

Salt & black pepper, to taste

Grana Padano or Parmesan cheese, grated

Fresh parsley, for garnish (optional)

Instructions:

1. Marinate the prawns:
In a bowl, toss prawns with paprika, lemon & herb seasoning, herb lemon salt, and olive oil. Set aside.

2. Cook the pasta:
Boil pasta in salted water until al dente. Reserve 1/4 cup of the pasta water before draining.

3. Cook chorizo & aromatics:
In a large pan over medium heat, cook chorizo until crispy. Add diced onion and sauté until translucent. Add garlic, sun-dried tomatoes, and chili flakes. Cook for another 30 seconds.

4. Add tomato paste:
Stir in tomato paste and cook for 1 minute to caramelize slightly — this adds a deeper, savory flavor.

5. Sauté the prawns:
Add the marinated prawns to the pan and cook for 1–2 minutes per side, just until pink and cooked through. Remove a few for garnish, if desired.

6. Make the sauce:
Pour in cream and a splash of pasta water. Stir until it forms a silky, flavorful sauce. Adjust thickness as needed with more pasta water.

7. Toss with pasta:
Add cooked pasta to the pan. Toss everything together until fully coated and glossy. Season with salt and pepper to taste.

8. Serve:
Plate up, top with reserved prawns, and finish with grated Grana Padano or Parmesan and chopped parsley.
